The greek letter φ (Phi) in Pasteur’s logo refers to the golden ratio, a proportion defined as the ratio of two quantities is the same as the ratio of their sum to the larger of the two quantities .
The golden ratio is connected to the Fibonacci sequence, and is found in nature, such as in the the arrangement of parts such as leaves and branches along the stems of plants and of veins in leaves.
